INGREDIENTS:

Dough: Almond 50%, candied yolk 28% (egg yolk 50%, sugar 46%, glucose 4%), syrup (50% sugar and 50% water) and cinnamon.
Walnuts: National peeled 41%.
Fondant: Bath/sugar 80%, water 19.20, burnt sugar (color) and vinegar 0.80% (sulfites and alcohol).

STORAGE: Room temperature/Cool and dry

SHELF LIFE: 45 days

PRESENTATION: Pecan balls wrapped in egg yolk dough and covered with fondant.
